Yeast is actually pretty interesting when you consider it's one of the species most adapted to human use in existance. I like how they say of the yeast strains of british breweries for instance, that they only function well when being utilized in copper tanks, as that's the enviroment countless generations of the strain has lived. That's some evolution in practise right there.
